ounces Beef Kielbasa

tablespoon Fresh Parsley(chopped)

teaspoon Fresh Basil(chopped)

teaspoons Garlic Powder
1
teaspoon Garlic Salt
1
teaspoon Dried Oregano Leaves
1
cup Shredded Parmesan Cheese
1 1/2
cups Shredded Mozzarella Cheese
1
medium Tomato (sliced)
1
Garlic Clove(crushed)

Fresh Spinach Leaves (large)

medium Onion(diced)

  • 1 In a large pan combine Kielbasa, Garlic Powder, Garlic Salt, and Oregano Leaves and cook on medium heat till brown. Drain excess grease and return to pan. Add onion and continue to cook till onion is light brown.
  • 2 Stir in Parsley, 1/2 teaspoon of Basil, and Crushed Garlic. Simmer uncovered for 5 minutes then reduce heat to low for 10 minutes. Heat oven to 350F degrees.
  • 3 In a 9x9 greased glass pan place the Spinach Leaves on the bottom of the pan side by side. Spoon Kielbasa mixture into each of the Spinach Leaves (approx 2 - 3 per leaf) As you fill each spinach leaf close the leaves sides together and push each one closer to each other. You should be able to fit all of the leaves with each one filled with the meat mixture inside the pan with little space between them.
  • 4 Once all the meat mixture has been added, spread 1 cup of the Mozzarella Cheese over the top of the spinach leaves and meat. Covering as much as possible. Top with the tomato slices. Then add the Parmesan Cheese on top. Add the rest of the Mozzarella Cheese on top of the tomato and Parmesan. Finally, sprinkle the remaining 1/2 teaspoon of chopped basil on top.
  • 5 Cover with foil and place in oven on middle rack for 15 -20 minutes. Then uncover and move to broiler for 2 - 4 minutes or until cheese on top of tomatoes is a light brown.

When covering with foil it is a good idea to layer the foil with olive oil or vegetable oil to keep cheese from sticking to it.
