So yummy! I just made it for myself, so I only used 2 eggs. I also added some fresh mushrooms and chopped vidalia onion. I needed to turn the heat up a little higher to cook the egg, but it was delicious!

Very filling and tasty. I layered thin slices of tomato at the bottom and added the spinach on top. Also, I used whole fresh basil on top of the egg mixture, which gave it a great look as well as delicious aroma and flavor. The fritata was moist and soft and delicious when served warm. This recipe is now a favorite breakfast for my family. Thank you!
