Spinach-Shrimp Salad with Hot Bacon Dressing

Throwing together this seafood favorite won't take long. Feta cheese is the surprise ingredient.

Ingredients

slices bacon, cut into 1-inch pieces

cup white vinegar

tablespoon sugar

teaspoon ground mustard

cups lightly packed bite-size pieces spinach leaves

cup sliced fresh mushrooms (3 ounces)

cup crumbled feta cheese (4 ounces)
1/2
pound cooked peeled deveined medium shrimp

Directions

  • 1 Cook bacon in 10-inch skillet over medium-high heat, stirring occasionally, until crisp. Stir in vinegar, sugar and mustard; continue stirring until sugar is dissolved.
  • 2 Toss spinach, mushrooms, cheese and shrimp in large bowl. Drizzle hot bacon dressing over spinach mixture; toss to coat. Serve immediately.

It was delicious although not exactly appealing looking. I used Dejon Mustard instead of stone ground and I used it over halved brussels sprouts.

I like the amount of dressing this makes. however, I use dry mustard~ 1/4 tsp instead of stone ground mustard. My husband and I do not like crunchy little things like mustard seeds. I also add hardboiled eggs to the sauce in the last minute or so, to warm them up I made this with 2 strips of bacon, the vinegar, dry mustard and 2 tablespoons of sugar ( we like ours sweeter). To thicken the dressing I put in the yolk of another hardboiled egg and mashed it up. My husband loved it!! So did I. This pairs well with steak also. I serve mine in a bowl and cover it with a plate to 'wilt' the salad a bit also. Enjoy!

Our family of carnivores just devoured this salad. I decided to try a salad as the entree for dinner, and this recipe was a big hit. I decided to saute the shrimp and mushrooms instead, and used regular mustard for the dressing. Turned out great. Thanks for a great recipe.
