small red potatoes, sliced

cups fresh spinach, torn

cup green onions, sliced

cup milk plus 1 tbsp

cup shredded cheddar cheese

cup olive oil
salt and pepper

can diced tomatoes

handful fresh basil, torn

tsp dried, ground sumac berries
  1. Preheat oven to 400 degrees
  2. In large skillet, cook potatoes in oil with sumac and garlic
  3. Add spinach and onions and salt and pepper cook down 1-2 minutes until spinach is wilted
  4. mix eggs and milk and pour over veggies in skillet
  5. sprinkle cheese on top
  6. transfer skillet to oven and bake 20 minutes.
  7. allow to set 5 minutes before turning out onto serving plate
