Ingredients

small red potatoes, sliced

cups fresh spinach, torn
1/4
cup green onions, sliced
2 1/2
tsp crushed garlic

eggs

cup milk plus 1 tbsp
1 1/2
cup shredded cheddar cheese
1/4
cup olive oil
salt and pepper
1
can diced tomatoes
1
handful fresh basil, torn
1
tsp dried, ground sumac berries

Directions

  • 1 Preheat oven to 400 degrees
  • 2 In large skillet, cook potatoes in oil with sumac and garlic
  • 3 Add spinach and onions and salt and pepper cook down 1-2 minutes until spinach is wilted
  • 4 mix eggs and milk and pour over veggies in skillet
  • 5 sprinkle cheese on top
  • 6 transfer skillet to oven and bake 20 minutes.
  • 7 allow to set 5 minutes before turning out onto serving plate
