sjr62 - You are a GENIUS! I followed your suggestions and my manicotti turned out PERFECTLY. The added water not only helped the noodles to cook to perfection but it also gave us the perfect amount of sauce to go with it. We loved the Italian sausage flavor that the pesto lends to the dish and my husband was ooooohing and aaaaaahing throughout the entire meal. This one definitely takes more time and effort to put together but it is WELL worth it! I will be making this again!

This was good. The pesto gave it an Italian sausage flavor. I followed the directions of sjr62 and didn't pre-cook the manicotti and it worked perfectly. I used a 26 oz. can of sauce and my husband felt that it wasn't quite enough sauce.

When stuffing manicotti, I don't cook it first. Fill with this great tasting filling, then add quarter of the jar of sauce to the bottom of your baking pan. Put your manicotti down, then add half of remaining sauce over the top; add water to the last quarter of sauce in the jar to make the jar half full-shake. pour this over the top. Cover and bake 10-15 minutes longer than recipe calls for. I added mozzarella cheese to the top during last 5 minutes.

This is such tasty filling! The pesto helped "hide" the spiach flavor for my kids. I used jumbo shells instead of the manicotti: WAY easier to "stuff"!!

We all liked this recipe. I jazzed up the bottled sauce with some spices in a sauce pot on the stove, The only thing I will change for next time is add a little more spice to the filling. Kids never even noticed spinach!

If you undercook the pasta a bit it helps to keep it from tearing so easily. And I don't believe there is an easy way to stuff manicotti. It is a tedious pain to me always.

Quick and easy true to its word...up until the stuff the pasta part. I've never seen or done that before - just knew I enjoyed eating it =). Ended up ditching the bag and letting a spoon and my fingers do the stuffing. I was a little disappointed that half my pasta split, but I just put the broken seams on the bottom and you can't tell. Still tasted wonderful! I will definitely make again, but will probably research stuffing tips first.
