Spinach Pasta Salad

Ingredients

cups uncooked bow-tie (farfalle) pasta (6 oz)

small tomato, cut into fourths
1/2
cup basil pesto
1/4
teaspoon salt
1/4
teaspoon pepper

cups bite-size pieces spinach leaves
2
medium carrots, thinly sliced (1 cup)
1
small red onion, thinly sliced
1
can (14 oz) quartered artichokes hearts, drained, rinsed

Directions

  • 1 Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • 2 While pasta is cooking, place tomato, pesto, salt and pepper in food processor or blender. Cover; process 30 seconds.
  • 3 Toss pasta, pesto mixture and remaining ingredients.

I made this last night and it turned out awesome! However, I did not put said ingredients in a food processor. I like the chunks of tomatoes,it give a nice texture. I also put in some shredded Parmesan cheese and omitted the artichoke hearts and carrot only because I didn't have them on hand. Yum yum in my tum tum :)

I make this recipe at least once a month - my husband and I love it! The only issue we had at first was that the raw onions were a little overpowering, so now I either sauté or caramelize the onions slightly before tossing them in. I also replaced the carrots with mushrooms (fresh, canned, and marinated all work well!)

I made this for a pot luck luncheon for college students and everyone loved it. However, I used rotini pasta and made it without artichoke & carrots and added chicken. It was delicious! You can also use diced tomatoes if you don't have fresh tomatoes!
