Great recipe! Only things I modified were the spinach and jumbo shells (about 20). If I would have used 10 oz. of spinach I would have had more spinach than cheese! I chopped the greens and gradually stirred it in with the cheese until it looked about half and half. Husband loved the crushed red pepper flakes. Added a nice kick.

This was absolutely delicious. I used rice cheese shreds instead of Italian cheese, and 1 box of Mori-Nu firm lite tofu seasoned with 1/2 t. onion powder and 1/2 t. salt instead of the ricotta. For the sauce I used pasta marinara sauce. It is something I will make again, next time I may add some vegetarian sausage bits. Thank you for the recipe!

i agree, a bit too much spinach. Also VEGAN means NO animal products! this recipe is NOT for vegans. vegetarians, yes

As a novice cook I found this recipe easy enough to prepare. I made it for a special dinner party and the older demographic was deeply impressed, thus, I fully intend on making it again.

I think this recipe calls for too much spinach. I served it to my family tonight and everyone agreed it would be great, if it only had less spinach. Try using just half the package of spinach. That's what I plan to do next time.

I added cooked Italian sausage to the mixture (my hubby is a meat man) It was fantastic, my kids 5 and 3 loved it. I made 7 one night and froze the other 6 prior to baking. A week or so later, I just thawed the (already stuffed manicotti) then baked as usual. It turned out perfect and it made for an easy meal when I was in pinch for dinner.
