Oh MY!! This salad is WONDERFUL! I followed the recipe as is.(I always do for the first time then adjust to my taste later) Everyone LOVED it! Will have to be sure to make LOTS of it the next time. For my family this is prefect as is! Thanks so much!

Try adding a little mango chutney to the dressing and some crushed red pepper (or fresh seeded red chile) Adds a little zip and improves the overall flavor. I also use light olive oil for the dressing. Good with snow peas for added crunch as well

It is okay, but I don't like the taste of canola oil for any salad I make. If olive oil overpowers, then I want peanut oil or at least corn oil or even coconut oil is better than canola... ugh. Other than the oil, you can not go wrong with spinach and mango, even if the mango is canned.
