Sounds great. An easy way to satisfy both types of guests. Vegetarians and guests who love meat. Especially good for singles. Going to pass this on to my Son.

Made these for my vegetarian roommate and I last night and they were a hit! The spinach-ricotta filling is really tasty. I'd recommend cooking the pasta until it's a tiny bit past al dente. My noodles were a bit too firm which made fitting them into the cups a tricky. I did have a lot of leftover filling and sauce, so I made a quick pasta bake for the freezer. Two dinners (and leftovers for lunch) from one cooking session...I can't complain about that!
