We made these for a party, followed the directions to the letter, very disappointed the balls "flattened out", (looked like cookies) were very dry and burned on the bottom. May try again using lower temp & longer time... Suggestions?

If you have allergies to eggs you can use sour cream for moisture. works great.

After reading a lot of comments about the flavor being bland...normally spinach is especially frozen spinach. Unless you are going for an Italian flavor; try blanching the spinach, squeeze it dry, then sprinkle a little kosher or sea salt to taste, then proceed w/the rest of the mixture. Sausage cheese balls are to die for...because they call for Cheddar cheese, use a sharp cheddar instead of Mozz or a Mozz w/a pepper or colby jack mix to kick it up for the flavor. I think then these will be the BEST you ever had :)

Gratetful for the comments!! My 9 year old "likes" spinach so thought this would be good recipe for her. Taking the previous comments into consideration I made some adjustments. 2 eggs instead of 1 1/2 cup moz. cheese, 1/4 cup asiago, 1/4 cup parmesan added season salt instead of garlic salt garlic powder and onion powder pepper Great side to any Italian dish.

Made them for a church function and quilting group. Number one they are a little bland, hadn't gotten the sauce out, messy to make and if 1 inch is the correct size it made a heck of a lot more. did two recipes and I ended up with over 100. The recipe says 30 so they must have been huge. May try them again using some of the other ladies changes.

Buuuhhhland. I added more italian seasoning, salt, pepper, parmesan and colby/cheddar cheese. No dice. I wouldn't recommend wasting your time or ingredients on this.
