If you have allergies to eggs you can use sour cream for moisture. works great.

Just made these for the first time. I added a 1/4 cup parmesan cheese and a second egg to the mixture. I used a cheddar/jack combo for the cheese instead of the mozzarella. I also used a whole wheat biscuit mix instead of the Bisquick. At the end,I rolled the balls in parmesan cheese and they were great. I baked them for the entire 15 minutes. A fantastic recipe for the season ahead and for all year round!!!

AmeliaB80 without eggs.... If you have egg allergies you may: In a cake, the eggs serve as a leavening agent, helping to make the cake light and fluffy. In baked goods such as cookies and muffins, the eggs add moisture and act as a binder, gluing all the other ingredients together. And, if you're looking to substitute eggs in a quiche or a mayonnaise, where eggs are central to the finished product, you'll probably need something like tofu to mimic the consistency of the eggs, while making other adjustments to the recipe as well to add flavor and body. You can also use 1/2 of a banana or 1/4 cup applesauce hope this helps you

After reading a lot of comments about the flavor being bland...normally spinach is especially frozen spinach. Unless you are going for an Italian flavor; try blanching the spinach, squeeze it dry, then sprinkle a little kosher or sea salt to taste, then proceed w/the rest of the mixture. Sausage cheese balls are to die for...because they call for Cheddar cheese, use a sharp cheddar instead of Mozz or a Mozz w/a pepper or colby jack mix to kick it up for the flavor. I think then these will be the BEST you ever had :)

Gratetful for the comments!! My 9 year old "likes" spinach so thought this would be good recipe for her. Taking the previous comments into consideration I made some adjustments. 2 eggs instead of 1 1/2 cup moz. cheese, 1/4 cup asiago, 1/4 cup parmesan added season salt instead of garlic salt garlic powder and onion powder pepper Great side to any Italian dish.

I did not like these at all. Too dry. Maybe I will try it again with a different cheese and alittle milk.

Made them for a church function and quilting group. Number one they are a little bland, hadn't gotten the sauce out, messy to make and if 1 inch is the correct size it made a heck of a lot more. did two recipes and I ended up with over 100. The recipe says 30 so they must have been huge. May try them again using some of the other ladies changes.

Buuuhhhland. I added more italian seasoning, salt, pepper, parmesan and colby/cheddar cheese. No dice. I wouldn't recommend wasting your time or ingredients on this.
