Spinach, Artichoke and Beer Dip

box (9 oz) frozen chopped spinach, thawed, squeezed to drain

jar (6 oz) Progresso™ marinated artichoke hearts, drained, coarsely chopped

bottle (12 oz) dark beer (1 1/2 cups)

packages (3 oz each) cream cheese

cup shredded pizza cheese blend (2 oz)

cup sour cream
1/4
cup mayonnaise
1/4
teaspoon garlic powder

teaspoon crushed red pepper flakes
Salt and pepper to taste

  • 1 In small saucepan, heat spinach, artichokes and 1 cup of the beer to boiling. Reduce heat; simmer 5 minutes. Remove from heat; drain and discard liquid.
  • 2 In large microwavable bowl, microwave cream cheese on High 30 to 60 seconds until softened. Stir in spinach and artichokes. Add pizza cheese, sour cream, mayonnaise, garlic powder, pepper flakes and remaining 1/2 cup beer; stir until blended.
  • 3 Microwave uncovered on High about 1 to 2 minutes or until thoroughly heated. Season with salt and pepper. Serve warm.

To make ahead, cover dip tightly with plastic wrap and refrigerate up to 8 hours. Serve it chilled, or warm in the microwave, or transfer to a saucepan and heat on the stove.
