This was SOOO GOOOOD!! I used corn in place of lima's and put in tsp. of lime juice and half of jalapeno sauteed in the olive oil til tender before putting chicken mixture in. This is very good and I am sure just as good, if you did not change a thing. The jalapeno, does add some wonderful flavor along with the lime. I will make this again and again.

My family with teenagers liked this soup. I used about 2 lbs chicken; can of corn instead of lima beans. You could also double the cannellini beans (or use a can of kidney beans with the an o cannelline beans). Served with corn bread.

Correction to above comment: You could also double the cannellini beans (or use a can of kidney beans with the can of cannellini beans). I also use the petite diced tomatoes.
