Ingredients

1/2
cup gourmet spreadable cheese with garlic and herbs (from 4 to 6.5-oz. pkg.)

cup half-and-half
1
tablespoon finely chopped chipotle chiles in adobo sauce, if desired
1
(1 lb. 4-oz.) pkg. refrigerated sliced home fries potatoes
1
(1-lb.) pkg. Green Giant® Frozen Broccoli Cuts, thawed
1
cup cooked ham strips (2x1/4x1/4-inch)
4
oz. (1 cup) shredded Cheddar cheese

  • 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Place spreadable cheese in medium bowl. Gradually stir in half-and-half and chiles; blend well. Set aside.
  • 2 In sprayed baking dish, layer potatoes, broccoli and ham. Pour spreadable cheese mixture over top; sprinkle with Cheddar cheese. Cover with foil.
  • 3 Bake at 350°F. for 45 minutes. Uncover; bake an additional 15 minutes or until bubbly around edges.

Chipotle peppers are smoked jalapeño chiles, available dry or canned in adobo sauce. For a mild casserole without the distinctive smoky flavor of these chiles, simply omit them.

To reduce the fat in each serving of this recipe by about 10 grams, use light garlic and herb cheese spread in place of the regular spread.

Freeze remaining chipotle chiles in small, recipe-sized quantities. Place the chiles in ice cube trays until they are frozen solid, then transfer them to a resealable plastic freezer bag.

This was very tasty and easy to make. Took just a few minutes to throw everything together and then used the time in the oven to catch up on other chores. Very tasty, the flavors complemented eachother well. Could be a bit more spicy, next time I will add more peppers and adobo sauce. If you're feeding kids than I think the heat is fine, but for just my husband and I we like things a little hotter. The serving size was perfect. Great, easy weeknight meal.
