12
oz frozen (thawed) bulk hot pork sausage
1/3
cup chopped onion
2
cloves garlic, finely chopped
1
medium red bell pepper, chopped (1 cup)
1 1/2
cups Gold Medal® all-purpose flour
1/4
teaspoon salt
1/4
teaspoon crushed red pepper flakes
1
cup milk
3
eggs
1 1/2
cups shredded Mexican cheese blend (6 oz)
  • 1 Heat oven to 425°F. Grease bottom and sides of 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 12-inch skillet, cook sausage, onion and garlic over medium heat, stirring frequently, until sausage is no longer pink; drain. Stir in bell pepper; remove from heat.
  • 2 In large bowl, beat flour, salt, crushed red pepper, milk and eggs with wire whisk until smooth. Pour into baking dish. Spoon pork mixture over batter. Sprinkle with cheese.
  • 3 Bake 22 to 27 minutes or until top is golden brown.

Expert Tips

Tame the heat by using mozzarella or a mild Cheddar cheese for the Mexican blend.

Serve with a bowl of refreshing fresh fruit chunks.

My family really enjoyed this dish. I did not have onions or red bell peppers in the house, but they would only make it better! I used hot bulk pork sausage and it was not too spicy. I can't wait to make this with the veggies next time!

It was divine! Will make it many, many more times! BUT, even with hot sausage and the red pepper flakes, it really wasn't too spicy. Note to self: add more crushed red pepper flakes next time :)

I made this for a brunch. It went over so well that I was only able to get a bite before it was gone. It's already been requested for the next get together.
