Spicy Salsa Meat Loaf

Looking for a new way to perk up meat loaf? Stir salsa into the meat mixture and then top the loaf with salsa. The amount of heat is up to you.

Ingredients

lb lean (at least 80%) ground beef
1/2
cup Progresso® plain bread crumbs
1/2
cup Old El Paso® Thick 'n Chunky salsa
1/2
teaspoon red pepper sauce
1
egg
1/4
cup Old El Paso® Thick 'n Chunky salsa

Directions

  • 1 Heat oven to 350°F. In large bowl, mix all ingredients except 1/4 cup salsa. Press mixture into ungreased 9x5-inch loaf pan. Top with 1/4 cup salsa.
  • 2 Bake 45 to 55 minutes or until meat thermometer inserted in center of loaf reads 160°F. Serve with additional salsa if desired.

what happened to the onion, carrots, celery, etc.? This is only half a meatloaf if you will, or perhaps they've never had a Good Meatloaf before & do not know how to make a Real Meatloaf? I mean ground meat, bread or cracker crumbs or oats, salsa, & an egg don't make a Meatloaf! Sincerely, jusluvcooking

I used ground turkey instead of beef, next time I'm going to use beef, it think it will hold up better with the salsa, also I'm going to add pepper jack cheese and garlic as suggested by other reviewers.

one of the best meatloaves I have made .... added a package of onion soup mix ... next time I will add fresh onion as well .... husband really liked it .... nice and moist ...
