Spicy Meatballs

Add spicy appetizers to your family’s meal. Serve warm meatballs ready in about an hour.

Ingredients

lb lean (at least 80%) ground beef
1
tablespoon grated Parmesan cheese
1
teaspoon dried oregano leaves
1/2
teaspoon dried basil leaves
1/2
teaspoon garlic salt
1/2
teaspoon pepper
1
egg
2
tablespoons lemon juice
1/4
cup olive or vegetable oil
1
clove garlic, finely chopped
1
red jalapeño chile, seeded, finely chopped
1
small onion, finely chopped (1/4 cup)
4
medium tomatoes, chopped (3 cups)*
1
tablespoon dry red wine, if desired

Directions

  • 1 In large bowl, mix beef, cheese, oregano, basil, garlic salt, pepper, egg and lemon juice. Shape mixture into 1-inch balls.
  • 2 In 10-inch skillet, heat oil over medium-high heat. Cook garlic, chile and onion in oil about 5 minutes, stirring frequently, until onion is tender. Add meatballs. Cook, turning occasionally, until meatballs are brown.
  • 3 Stir in tomatoes and wine; reduce heat. Cover and simmer 30 minutes, stirring occasionally.

Expert Tips

1 can (28 oz) Italian-style (plum) tomatoes, well drained and chopped, can be substituted for the fresh tomatoes.
