large white onion, thinly sliced (1 1/2 cups)

lb fresh green beans, trimmed

tablespoons reduced-sodium soy sauce

teaspoon salt

teaspoon crushed red pepper flakes

  • 1 In 10-inch skillet, heat oil and sugar over medium heat, stirring occasionally. Add onion; cook 10 to 15 minutes, stirring frequently, until tender and light golden brown. Remove onion from skillet.
  • 2 To same skillet, add remaining ingredients. Cook 3 to 5 minutes, stirring constantly, until beans are crisp-tender. Stir in onion; cook until thoroughly heated.

Yummmmy! What a great side dish! Hubby wanted Asparagus w/our fish and I do not care for that. So, I got some fresh green beans and an onion and made this! He didn't eat much of his veggie choice....he ate more of mine! : ) I will definitely make this one frequently!

I tried this side dish for the first time last night along side grilled chicken. It was great! The soy sauce and caramelized onions gave great flavor. My husband and I don't do red pepper so I used black pepper instead and it was fine. I also used regular soy instead of reduced sodium so I used half the salt than what the recipe called for. I figure you can always add salt, but can't take it away. The consistancy was perfect, we did not need to add any extra seasonings.
