Orange roughy, red snapper and cod are types of lean fish that are less than 2.5 percent fat. They all have a mild flavor perfect for seasoning and serving with sauces.
To test fish doneness, place a fork in the thickest part of the fish and gently twist it. The fish will flake easily when done.
