Spicy Cajun Sausage Soup
Spicy Cajun sausage soup
cup olive oil
cup green pepper chopped
cup chopped onion
celery stalks chopped
small chicken breast
cups Andouille Sausage or similar
tbs creolle seasoning
clove minced garlic
oz diced tomatoes
oz kidney beans
containers chicken broth 64oz
Sautee celery, carrot, onion, and green pepper in olive oil for 10 minutes on medium heat. Add diced chicken and diced sausage to mixture and continue cooking on med. heat for 5 minutes. Stir in cajun spice, pepper, cumin, and garlic. Sautee another 5 minutes.
Add diced tomatoes, chicken broth, kidney beans, and rice. Simmer for 2-2 1/2 hours covered.
