Ingredients

cups Original Bisquick® mix
2/3
cup milk
1/4
cup butter or margarine, melted

egg
1/3
cup sugar
3/4
teaspoon ground cinnamon
1/2
teaspoon ground ginger
1/4
teaspoon ground nutmeg
3/4
cup fresh or frozen blueberries

Directions

  • 1 Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • 2 In large bowl, mix all ingredients except blueberries. Gently fold in blueberries. Divide batter evenly among muffin cups.
  • 3 Bake 17 to 20 minutes or until golden brown. Remove from pan to cooling rack. Serve warm, if desired.

Just out of the oven. Sub Greek Yogurt for the melted butter and turned out great. Nice texture. For my oven, baking time was spot on. Next time I will try adding some lemon zest as well. This is a keeper !

Made these muffins but doubled the amount of blueberries. Then used jumbo muffin tins. We put 1/3 cup of batter per muffin and cooked them at 375 oven for 30 minutes. They were perfect.

The blueberries we get here are large and tasteless. The old-time small blueberries were delicious. So I substituted re-constituted and cut-up dried apricots for the blueberries plus a few raisins. I also added the 1/4 cup sugar to the recipe. Splenda loses its sweetness when cooked or baked I find. So I used baker's sugar - a superfine sugar available on the market. Baker is not its trade name, merely its designation.
