We love this recipe!! I don't usually have chicken on hand so I used ground beef and its delicious!! My whole family enjoys it even my picky son. I made a few other changes but the recipe is very flexable so if you don't like something in it you can easily leave it out or substitute it.

This recipe was really great and is adaptable to your preferences. I used a 9 inch square baking dish. I cooked a package of spanish flavored rice to add more flavor. (I reduced cooking time to 20 minutes, since rice was hot) I replaced the salsa with diced tomatoes, skipped the beans, and didn't add the green onions until after the baking was done. The layer with the corn came out soggy... but other than that this was perfect! I will definitely make again.

VERY good recipe, one that I'll be making again and again. I didn't understand why the tortillas needed to be cut into halves and strips...they all came together as whole tortillas for me, so won't bother with that next time. I used 2 cans of the medium enchilada sauce and substituted mexicorn for the frozen corn. This won't work well with a regular pie dish, it will overflow, so use a 2 or 3-quart baking dish.

How can I put this???? ummm... YUM-O!!! My hubby and son are very finicky and they both loved this! I did change a few things.. I used beef instead of chicken and I used a green chile enchilada sauce. Also, I couldn't find the white corn at my grocery so I used a frozen southwestern corn mix (corn green & red peppers, onions and some kind of s.w. seasoning). The one thing I'll do next time, per request of my hubby, is add cheese between the layers. It's a great recipe and I can't wait to eat the leftovers tonight! You will not be sorry, try this!

I made this with one can of Hot enchilada sauce and one can of mild because I couldn't find medium sauce. It was way to spicy for me but my family liked it alot. Next time I will use mild and let them use spicy salsa instead. Aside from being spicy it was very good.
