This was very, very good. I made it on the stovetop and didn't add the rice - made it seperate so that we could each make our own ratio of rice and topping. I used a green pepper instead of red only because I didn't have one.

Absolutely delicious...all of my potluck guests raved about it and wanted the recipe. And so easy...I used Italian seasoning instead of just oregano and did not drain the artichoke quarters but added them with their juices. To make it quicker (didn't have 6-8 hrs. to wait!), I sauteed and partially cooked the chicken and turkey pieces, peppers and onions on the stovetop and then added them all with their juices to the rest of the ingredients in the crock pot and cooked on High for 1-1/2 hours. Blended the flavors of everything perfectly and what a great meal! My husband loved it, too, and made sure we had some leftovers to take home!
