Spaghetti Basil Torte

This impressive looking torte is deceptively easy to make and a perfect dish to serve when you're entertaining. If you like ripe olives, add a can (four ounces) of sliced ripe olives to the spaghetti mixture. Serve with whole green beans and warm crusty bread.

I have used this recipe for years after I found it in one of those grocery store magazine cookbooks. Unfortunately I misplaced the recipe and was luckily able to find it on line. This is a great recipe for late summer when our garden is overflowing wit fresh tomatoes and basil. I add extra cheese (great with fresh mozz substituted in layers) and a little extra salt. All around a tasty dish. I don't have a spring form pan, but use a baking dish instead. This works just fine!

This recipe was fast, easy, and delicious. the ingredients are easily substituted and interchangeable, depending on your families tastes; for instance omit basil and add italian sausage, or throw in some different herbs. Mozzarella is a great addition as well. Spring form recipes are hard to come by and this one tops my list.
