Spaghetti and Spicy "Meatballs"

Vegetarian meatballs? Who would have guessed?! Enjoy classic spaghetti with red sauce.

Ingredients

package (16 ounces) uncooked spaghetti
2
cups cooked white rice
1/2
cup quick-cooking oats
1
medium onion, chopped (1/2 cup)
1/4
cup Progresso® plain bread crumbs
1/4
cup milk
1
tablespoon chopped fresh or 1 teaspoon dried basil leaves
2
teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
1/4
teaspoon ground red pepper (cayenne)
1
egg, beaten
1/2
cup wheat germ
1
tablespoon vegetable oil
2
cups spaghetti sauce
Shredded Parmesan cheese, if desired

  • 1 Cook and drain spaghetti as directed on package.
  • 2 In large bowl, mix rice, oats, onion, bread crumbs, milk, basil, oregano, red pepper and egg. Shape into 12 balls. Roll balls in wheat germ.
  • 3 In 10-inch skillet, heat oil over medium heat. Cook balls in oil about 10 minutes, turning occasionally, until golden brown.
  • 4 Heat spaghetti sauce until hot. Serve sauce and rice balls over spaghetti. Sprinkle with cheese.

Decrease the amount of ground red pepper for a milder version of this recipe.

These "meatballs" are rolled in a small amount of wheat germ to give them a golden brown color, bit of crunch and nutty flavor. Store wheat germ in the refrigerator to keep it fresh.

I really liked these! I have been starting to look for more vegetarian meals. I don't care to eat meat all the time. My 15 yr old son does, so this was a test also. He thought they were turkey meatballs. (they texture I guess)he liked them! I still haven't told him. I definately added parm cheese, salt & pepper. And also sauted the onion & garlic. TIP...use a cookie scooper to drop into the wheat germ (I mixed it with bread crumbs too) So much easier and not messy on your hands. I also used brown rice. I just hope they freeze ok.

Tried the recipe again and even better this time around. I sauteed 1/2 the onion with garlic and let cool. I also used panko italian bread crumbs instead which had a better taste. I still added parm cheese, salt and pepper to the recipe. When I had problems rolling the meatballs I sprinkled more bread crumbs on top of the mixture which made it easier to roll. I also baked them 400 for 20 min. I sprayed the pan and then the top of the meatballs, turned them after 10 minutes for even browning. This is worth trying.

Really good, I will make again. I added parm cheese to the recipe as I would with a traditional meatball recipe. I also added salt and pepper. I rolled them in a combination of oat bran, bulgar, and parm cheese.
