Southwestern Ranch Pasta Salad

Ingredients

1: box Betty Crocker® Suddenly Salad® classic pasta salad mix

1: cup Green Giant® Valley Fresh Steamers™Niblets® frozen corn

1/2: cup spicy ranch or regular ranch dressing

1: tablespoon lime juice

1 1/2: cups small broccoli florets

1: cup grape tomatoes, halved

4: medium green onions, sliced (1/4 cup)

2: tablespoons chopped fresh cilantro

: Tortilla chips, if desired

Directions

1 Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally, adding corn during last 2 minutes of cooking.
2 Drain pasta and corn; rinse with cold water. Shake to drain well.
3 Im medium bowl, stir together seasoning mix, dressing and lime juice. Stir in pasta with corn and remaining ingredients except tortilla chips. Serve salad with tortilla chips. Serve immediately, or refrigerate.

No Spicy Ranch dressing in your fridge? Just add about 1/4 teaspoon chili powder to the regular ranch dressing.

Toss it in! Stir 1 1/2 cups cut-up cooked chicken or ham or 1/2 cup Progresso® canned black beans (drained and rinsed) or shredded cheese into finished salad.

I had some extra boxes of the Classic Suddenly Salad in the cupboard and found this recipe as a means to use them up. It's fantastic. Per the suggestion, I added black beans, cooked chicken, and shredded cheese. An earlier reviewer is correct - leaving the corn frozen and adding it in at the end is the way to go. This recipe is very flavorful without being overwhelming.

Made this today for lunch and it was yummy. I added a cut up cucumber instead of the broccoli. Also, instead of frozen corn I used fresh corn cut off the ear and grilled on stove top for like 10 mins. I added the 1/2 cup black beans and some grilled chicken. This recipe is a keeper!

My family really enjoyed the recipe. I used the chili powder as suggeted, but also sprinkled it across the top. I did not cook the corn (used it raw and frozen, it helped chill the salad quickly) and also added the black beans. It was a hit, so much so that I am forwarding the recipe to others! :-)
