You can practically smell the campfire with this classic cowboy stew, with pork and vegetables simmered with chiles and creamy corn hominy.

I made this tonight for the first time. To me, it was just okay. I think the hominy in conjunction with the potatoes tasted bland in a spicy broth. I think if I were to make this again, I would try using only half or no hominy and put in a full green and red bell pepper. If you like your stew with a hearty thick sauce, you might want to add some corn starch or flour. I'm thinking this may do better in a slow cooker so the spices have more time to blend into the meat and potatoes.
