Southwestern Chicken BLT Salad

How do you top everybody's favorite BLT? Make it into a salad with chicken and drizzle with creamy salsa dressing.

Ingredients

Salsa Bacon Dressing

cup Old El Paso™ Thick 'n Chunky salsa
1/2
cup refrigerated bacon-flavored dip
1
tablespoon chopped fresh parsley

Salad

bag (10 ounces) romaine and leaf lettuce mix
2
packages (6 ounces each) refrigerated cooked Southwest-flavor chicken breast strips
4
plum (Roma) tomatoes, coarsely chopped
1/2
cup chopped cooked bacon
1/2
cup croutons

  • 1 Mix all Salsa Bacon Dressing ingredients.
  • 2 In large bowl, mix all Salad ingredients. Add dressing; toss until coated.

Expert Tips

You can use refrigerated ranch dip instead of bacon dip for a slightly different flavor.

Purchase precooked bacon strips in the meat department of the grocery store.

Cherry tomatoes, cut in half, can be used instead of the plum tomatoes. You'll need about 1 cup.
