Try hearty vegetarian fare. Make a bean bake topped with tasty cornmeal biscuits.

Really tasty! My only compliant? Too many dumplings for the amount of bean/tomatoes.

I made this tonight with a few alterations. I used a can of black eyed peas instead of great northern beans and I was out of stewed tomatoes so I used diced instead. I added some canned corn and chili powder to give it more flavoring. I sprinkled some cheese on top and baked it a little longer because of the diced tomatoes. I enjoyed it.

LOVED THIS! Very hearty dish and easy to make. Used chili-style diced tomatoes and cheese on top is a must! Cornmeal added a nice "crunch" to dumplings. Will make again!

I loved this dish! I was out of red salsa- so I used salsa verde. I used three cans of beans vs. two. (pinto, red, and northern) I took another reviewer's suggestion and added alittle Bisquick mix- a little cheese- and alittle more Bisquick. Hubby liked! He wants me to make this next time with less beans and more shredded chicken. Don't have the Bisquick or corn meal? This would be yummy with tortilla chips. Also, cooking tip! The oven mixture bubbled over on to the bottom of my oven. Will put cookie sheet under dish next time to prevent. :)

I agree with the review that the bean mixture needs to be doubled. It's very bready if you don't - more like bread with some beans. It is very tasty and I'll make it again though!

I made this tonight for dinner and thought it was a fun vegetarian meal with a hearty Southwestern taste. I thought it was slightly dry and might add another chopped tomato or maybe a little more salsa next time. I think a can of corn would be a nice compliment as well.

Good recipe and quite easy to make as well. The next time I make it though I plan on doubling the ingredients (while leaving the cornmeal bisquits the same) because the topping pretty much over-powered the beans. I think it will be perfect then.

I''ve made this a couple of times and myself and my family really like it. I like to use black beans in place of the northern beans and I use diced, seasoned tomatoes in a can instead of stewed tomatoes and I also sometimes add a layer of shredded cheese between the bean mixture and the dough. It comes out great!
