Ingredients

can (18 oz) Progresso™ Recipe Starters™ creamy roasted garlic with chicken stock cooking sauce
1/2
cup Old El Paso® Thick 'n Chunky salsa
2
cups shredded deli rotisserie chicken
1
can (11 oz) Green Giant® SteamCrisp® Mexicorn® whole kernel corn with red and green peppers, drained
1
package (11 oz) Old El Paso® flour tortillas for burritos
2
cups shredded taco cheese (8 oz)

Garnishes, If Desired

Sour cream
Diced or cubed avocado
Sliced ripe olives

Directions

  • 1 Heat oven to 350°F. Spray 9-inch glass pie plate or 9 1/2-inch deep-dish glass pie plate with cooking spray.
  • 2 In medium bowl, mix cooking sauce and salsa. In second medium bowl, mix chicken and corn. Spread one-fourth of sauce mixture in pie plate. Top with 2 tortillas, one-fourth each of the sauce mixture, chicken mixture and cheese. Repeat layers 2 more times (using 3 tortillas for remaining layers), starting with tortillas and ending with cheese on top. Pie plate will be very full but should not overflow.
  • 3 Bake about 30 minutes or until hot in center and cheese is melted and lightly browned around edges. Let stand 5 minutes before serving. Top each serving with sour cream, avocado and olives.

Very good for a weeknight dinner. I only used 6 tortillas and it was probably runnier than it would have been with 8. I think I would use more salsa and less cooking sauce for more flavor. Or, using medium or hot salsa would add more zip. The recipe was miswritten - it should read 1/3 each of the chicken mixture and cheese per layer.
