oz uncooked fettuccine
Olive oil-flavored cooking spray
cup Old El Paso™ Thick 'n Chunky salsa
cup Green Giant™ Steamers™ Niblets® frozen corn
tablespoons chili sauce
teaspoon ground cumin
can (15 oz) Progresso™ black beans, drained, rinsed
cup chopped fresh cilantro
Cook and drain fettuccine as directed on package. Spray fettuccine 2 or 3 times with cooking spray, tossing after each spray. Remove from saucepan; cover to keep warm.
In same saucepan, mix remaining ingredients except cilantro. Cook over medium heat 4 to 6 minutes, stirring occasionally, until corn is tender.
Divide fettuccine among 4 bowls. Top each with about 3/4 cup sauce mixture. Sprinkle with cilantro.
There's no need to add oil to the water you boil for pasta. By using enough water (4 cups water for every 4 ounces of pasta), adding pasta slowly and stirring frequently, you can keep the pasta from sticking together without having to add fat.
