I made half of the batter without the chiles and half with (I don't like them but my husband does). The corn was a delicious touch! Added nice sweetness.

I have made a recipe similar to this for over 15 years. It is my daughter's favorite, and one of the first she learned to cook and she is now 21! My version varies according to what I have on hand. I have used a can of regular corn, drained, or creamed corn, or the Mexican style corn blend that has bell peppers. I've added the olives to the pancake batter as well as used them as a topping. Our favorite is scoop of canned or homemade chili along with all the other good toppings! It's a great recipe for camping when everything is prepped before leaving in baggies.
