I made this as a quick throw together for a bbq. I used rotisserie chicken from the deli though, and just cut up the breast meat. Instead of using cheese, I diced up some avacado and put it in, since there would be kids eating it, i didnt really want any spice. It was a very good salad, everyone enjoyed it and it was super and quick easy to make. I would definitely make this again.

I made this ahead (the morning of) to have prepared for tonight as an easy and quick supper, I made it early so the flavors could 'meld' and the salad would be well chilled. Upon my initial taste test I thought the bacon flavor was a little overwhelming so I am glad I did not add additional bacon bits as was my first thought. I added chili powder to taste and it could have handled a pinch of cayenne pepper as well as the pepper-jack cheese did not spice it up as much as I thought it might. This is definitely an easy recipe for a potluck or picnic item. I do not have small children but I can imagine the bacon/ranch combination would appeal to them. I added about a cup of frozen green peas during the pasta cool down period just because hey are a family favorite in pasta salad. A good combination of flavors and the recipe makes a large amount so you can certainly feed at least four with a single recipe.
