Lb Cooked, Shredded Chicken (breast)

Can(14.5oz) Diced Tomatoes w/ Zesty Green Chilies

Cups Tortilla Chips

Bag Blue-Corn Tortilla Chips

Cups Mexican Cheese Blend (shredded)
  1. ~~~OPTIONAL TOPPING IDEAS~~~ Sliced canned jalapenos, sour cream, guacamole, diced tomatoes, diced onions, & cilantro ~~~PREHEAT OVEN TO 400 degress~~~
  2. Heat oil in a large skillet (w/ lid). Add onion, cook 5 mins. Stir in garlic; cook additional minute. Add chicken. Stir in chili powder, salt, & cumin. Cook 6-7 minutes.
  3. Stir in diced tomatoes & tomato paste. Cover & simmer on low for 5 minutes.
  4. Meanwhile, arrange 1/2 of the chips on an oven-safe platter. Spoon 1/2 of the chicken-chili over chips, top with3/4 cup of cheese. Repeat layering.
  5. Bake for 8 minutes or until cheese is melted. Garnish with additional toppings (optional)
