Who says stir-fry has to be Asian? Enjoy this zesty blend of rice, corn, black-eyed peas and spinach.

The first night I made this I thought it was rather bland, but after have it as leftovers I found it rather appeasing! I think it needed more time to really take in all of the flavors.

After reading the other reviews I wasn't sure what to expect. I doubled the spices and added a splash of Tabasco and was quite happy with the way this dish turned out.

My family is not big on spinach, so I added french cut green beans instead and exchanged pinto beans for the black eyed peas. I also added a dash of cumin and red pepper to add some spice and flavor. Combined with a chicken breast marinated with southwestern rub it was a satisfying meal.

Really excellent and truly simple to prepare. I was worried that garlic salt as the only seasoning would yield a bland dish. I was wrong!A dash of hot sauce (Frank''s, Cholula, or Tabasco) is just the right touch to wake this dinner up.

The color of the food looked appetizing the texture was good, but I agree, it was lacking something. Had no taste at all! It looked so good but the flavor was disappointing. Other than this dish everything I have made from Betty Crocker has been delicious!

This dish was very colorful and the black eyed peas made it taste like there was meat in it. The flavors meshed really well together, however, I couldn''t help but think that it needed something. Just couldn''t put my finger on it.

At first it didn''t sound so good but if you add a little extra seasoning, it is pretty tasty. Both my kids are it without a fight (they are 3 1/2 and 1 1/2). I recommend it with quesadillas.
