small onion

can chopped black olives

can chopped spinach

cup shreddded sharp cheddar cheese

cans enchilida sauce
2
cups shredded monterey jack cheese

package soft taco size tortillas
  1. Preheat oven to 350F. Brown ground beef and onion over medium heat. Once no longer pink add spinach and black olives. Stir in 1/2 can enchilida sauce and cheddar cheese. .Spoon beef mixture into tortillas and roll. Place in 9x13 baking dish and pour the rest of enchilida sauce over. Top with monterey jack cheese. Cover with foil and bake for 20 minutes or until cheese is melted.
