Snowman Chocolate Truffles

These adorable snowmen are delicious and surprisingly made with chocolate sandwich cookies and cream cheese. Loved by kids and adults alike!

Ingredients

Pkg (1 lb 2 oz) creme-filled chocolate sandwich cookies
1
8 oz Pkg Cream Cheese
2
20 oz Pkgs Vanilla Flavored Almond Bark
candy coloring (not food coloring)- black, orange & blue

  • 1 Line cookie sheet with waxed paper. Place cookies in large food processor. Cover and process with on-and-off pulses until consistency of fine crumbs. In large bowl, mix cookie crumbs and cream cheese until well blended and mixture forms a doughlike consistency.
  • 2 Roll dough into a 3/4 inch ball for the body and a 1/2 inch ball placed on top for the head. Place the chocolate snowmen on a cookie sheet and put in the freezer about 30 minutes or until very firm.
  • 3 In medium microwavable bowl, microwave almond bark at 30% power for 5 minutes, stir and return for 15 second intervals until completely melted and smooth.
  • 4 Using tongs or bamboo skewers (pushed through the top), dip the frozen snowmen into the almond bark and allow the access to drip off. Place dipped snowmen back on cookie sheet and return the dipped snowmen to the freezer to set. I find it easier to only take a few out at a time so they don't warm up (it is easiest to work with when they are frozen).
  • 5 In medium microwavable bowl, microwave almond bark at 30% power for 5 minutes, stir and return for 15 second intervals until completely melted and smooth.
  • 6 Divide the melted bark into 3 small bowls (2 of them only need to be about a cup size). Place about 3/4 cup of melted bark In each of the smallest bowls. Mix in drops of orange in one small bowl, Black in the 2nd small bowl and color the remaining bark the color for the scarves (I used blue).
  • 7 Using a toothpick or bamboo skewer, dot on black eyes, mouth and buttons. Dot on an orange nose - if you dot and slowly pull out and hold for a moment, it will set and give the carrot nose a 3D effect. Place blue melted bark in a Ziplock sandwich bag and snip off the very edge with scissors and pipe on scarf and you have yourself an adorable snowman, that is almost too cute to eat (Almost is right - they are too delicious to just look at).
  • 8 Store snowmen truffles in an airtight container in the refrigerator.

Expert Tips

Don't use food coloring with your almond bark up as it will cause it to sieze. Another option is to use colored candy melts. Either way these items can be found at your local craft store.
