Made this for my RA kids group. A couple kids have to have gluten free so thats why I made this. They devoured them. Going to make them again.

Just made these for the first time. A few adjustments are necessary. First, I used Truvia baking blend because I'm trying to cut back on sugar for my kids (not a great idea around the holidays!). You have to make up for the moisture that granulated sugar creates, so I added applesauce, but next time I'll need to add more (I didn't measure, so I have no idea how much I used). Also, even thought the BIsquick mix contains Xanthum Gum, I would strongly recommend using 1/2 teaspoon (1/4 teaspoon/cup of flour) to hold it together better. And would add more vanilla.

Love these! I added the teaspoon of vanilla as previously suggested. I also had to add an extra egg. The eggs I had were large size, but the dough wasn't holding together. Thanks for the recipe.

I baked these today and my family loves them. I added a teaspoon of vanilla like a previous post suggested and they are delicious. I am very happy I can now eat cookies like everybody else :))) Thank you Bisquick and Betty Crocker.

I made these yesterday for my husband. And he loves them. We have had SO many bad gluten free recipes since he was diagnosed "gluten intolerate". I was in a hurry and accidentally put the first 1 1/4C. of sugar in instead of 1C. for the cookies and 1/4C. for the cinnamon and sugar coating, but he just loved them and wants them the same way next time. I also added 1 teaspoon of vanilla and decreased a bit of the cinnamon. I also put the dough in my frig for about 1/2 while I showered, since it was warm in here. The dough rolled out wonderfully. I used the small "pampered chef" cookie scoop and they made the perfect size cookie. Soft but chewy. So glad they make G.F. Bisquick!
