I love the simplicity of this dish. Lots of great flavors with the cayenne pepper, Dijon mustard, and fired roasted tomatoes. I can't wait to make this one. Also, I have a quick prep skillet version that I used to make. Country Pasta- Pre-heat a skillet over medium heat. Add pre-cooked egg noodles (one packet of dry noodles) to skillet. Add one can of Sloppy Joe sauce to noodles, stirring lightly. Slice 8 ounces of Sharp Cheddar cheese. Add cheese to noodle mixture. Stir ingredients together to blend in the cheese thoroughly. Cover skillet with lid. Reduce heat to low. Allow the Country Pasta to simmer until cheese has melted. About 15 minutes. For added flavor, saute a sliced yellow onion, mushroom slices (one package), & green pepper slices (one large pepper) in a pre-heated skillet and one tablespoon of cooking oil. Then, add the Country Pasta ingredients as listed in this recipe.

This was a good side dish. I'm not normally a fan of homemade Mac and cheese because I've never had a truly good one. This was very flavorful and I got a lot of compliments. I used regular petite diced tomatoes instead of fire roasted. I will make this again.

THAT WAS DELICIOUS! i did change some of the ingredients though... instead of fire roasted diced tomatoes i used regular diced tomatoes and added pepper, paprika, and creole seasoning to my liking. you could also leave out the crushed red pepper if you don't like spicy hot foods, try this and it'll be perfect for your picky taste buds!

This was good... but way too many tomatoes and I love tomatoes. Took away from the cheese flavor. I will only use one can next time.

I couldn't find a smoked cheddar so I substituted with smoked gouda. My family loved this recipe. We have tried many and this one is at the top of the list!

I added about a 1/2 c extra of whipping cream ( as it was super dry) and about 1/2 c of extra cheese. However this still wasn't that cheesy. Next time I make this I think I might add 4 C of cheese to make it super cheesy . And I also added diced tomatoes with chopped chili's .. Yummy! Taste was good just needs more cheese

This was very good! I didn't have smokey cheddar so I used sharp regular and added a few drops of liquid smoke instead, which worked wonderfully! I used Half and Half instead of whipping cream for lower fat and calories...and was what I had on hand. Other then that, I did it the same and it was so tasty. I'll definitely make it again.

My husband and I made this last night and LOVED IT! I eat Gluten Free and this was very easy to make GF. Next time, I think we will add Pepper Jack cheese for more of a kick. Normally, I dont like big chunks of tomatoes but for some reason this just worked well with those. This makes so much it would be the perfect recipe for a potluck or family function. This will def. be made again!
