Smoked Sausage Casserole with Cheesy Cornbread

Ingredients

ring (1 lb) fully cooked smoked sausage or kielbasa, cut into 1/4-inch slices
1
bag (1 lb) frozen broccoli, carrots & cauliflower, thawed, drained

cans (10 3/4 oz each) condensed Cheddar cheese soup
1 1/4
cups Original Bisquick® mix
3/4
cup cornmeal
1 1/2
cups milk

eggs
1
cup shredded Cheddar cheese (4 oz)

Directions

  • 1 Heat oven to 450°F. Spray 13x9-inch pan with cooking spray. In pan, mix sausage, vegetables and soup.
  • 2 In medium bowl, stir Bisquick mix, cornmeal, milk, eggs and 1/2 cup of the cheese until blended. Pour over sausage mixture.
  • 3 Bake uncovered 25 to 30 minutes, sprinkling with remaining 1/2 cup cheese for last 1 to 2 minutes of baking, until light brown.

My husband and I both liked this dish. However, I did change it up a bit. Instead of the cheddar cheese soup, I used a can of cream of celery and a can of cream of chicken. The other reviews had said to cut down on the breading part, so I used 1 cup of bisquick and a little over 2/3 cup of cornmeal. I also added some pepper to it. Quite tasty!!

I made this for a family that just had a baby and I used broccoli cheddar soup and heart smart bisquick. It was pretty good, but a little heavy for me.

A good recipe, but I agree, a bit to starchy, next time I will reduce the Corn Meal & Bisquick. Too big a portion for two people, made up dinner for two nights. Good thing is, I now have dinner made for one evening next week.
