Smoked Salmon Tarts

Ingredients

cup Original Bisquick® mix
1/2
cup milk
1/4
cup sour cream
1/2
teaspoon Worcestershire sauce
2
eggs
2/3
cup shredded Cheddar cheese
1/3
cup chopped smoked salmon
2
tablespoons sliced green onions

Directions

  • 1 Heat oven to 400ºF. Spray 24 mini-muffin cups with cooking spray.
  • 2 Beat Bisquick, milk, sour cream, Worcestershire sauce and eggs with fork until blended; stir in remaining ingredients. Spoon about 1 tablespoon mixture into each muffin cup.
  • 3 Bake 15 to 20 minutes or until golden. Cool 5 minutes. Loosen sides of tarts from pan; remove from pan. Refrigerate any remaining appetizers.

Use a rubber spatula to easily remove batter from the tablespoon and guide it into muffin cups. Wipe any excess batter from top of muffin pan to prevent burning.

I made these for a snack for card club--a few people liked them okay, but they weren't that good. We thought they were better warm than cold, but still not great. I don't plan to make them again.

I have to agree that this is a really great recipe. What''s even better about this is you can add a bunch of different things to it, you don''t just have to use salmon and chedder. I''ve made these with spinach, feta and sun dried tomatoes; turkey ham, white cheddar and chives; and asiago, parmesan, ricotta and crab. Next I plan on trying a roasted red pepper, romano and artichoke mixture. I also like to play with spices like cumin, sage, thyme and dill. Also, using the reduced fat Bisquick, low-fat milk and egg substitute is just as good as a previous reviewer said. It doesn''t take away from the flavor at all. I highly recommend it.

These are delicious and are now a part of my permanent recipe file!The first batch I made following the recipe as written.In the second batch I used reduced fat Bisquik, fat free milk and sour cream, reduced fat sharp cheddar, and Egg Beaters instead of 2 eggs. To my great surprise, these tasted exactly the same as the original recipe. Just a tip for those who may be watching fat and/or cholesterol.
