I love this recipe. However, I just cook it on the stove in a big pot. I usually triple the recipe for winter parties. Super easy, yummy and hearty. This is one of my favorite recipes. If you are worried about the celery becoming to soft, put the harder veggies (potato, carrots, parsnips) in first and add the leeks etc, later.

This stew had very little flavor. I added the entire cornstarch mixture and it become very, very thick. The cook time was too long for some vegetables like celery (making them too soft) and not long enough for others like potatoes (still too firm).
