Slow Cooker Winter Pork Roast Dinner

Satisfy a group of six with this pork-and-sweet potato combo, which you can put in the slow cooker in 20 minutes.

Ingredients

rolled boneless pork loin roast (1 3/4 to 2 lb)
1
teaspoon salt
1/4
teaspoon pepper
3
large dark-orange sweet potatoes, peeled, thinly sliced
1
medium onion, sliced, separated into rings
1 1/2
teaspoons dried thyme leaves
1
quart (4 cups) apple juice

Directions

  • 1 Sprinkle pork roast with 1/2 teaspoon of the salt and the pepper; place in 4- to 5-quart slow cooker. Place sweet potatoes around and on top of roast. Top with onion; sprinkle with thyme and remaining 1/2 teaspoon salt. Pour apple juice over onion.
  • 2 Cover; cook on Low setting 6 to 8 hours.
  • 3 With slotted spoon, remove vegetables from slow cooker; place on serving platter. Remove roast from slow cooker; place on cutting board. Cut roast into slices; place on platter. If desired, drizzle some of cooking liquid from slow cooker over vegetables and roast.

Cooking liquid can be thickened into gravy with flour. Two tablespoons flour will thicken 1 cup liquid. Mix flour with 2 tablespoons water before stirring into cooking liquid in saucepan. Boil over high heat for 1 minute, stirring constantly.

First time I made this I used applewood rub instead of thyme and it turned out great. My kids didn't care to much for the sweet potatoes though. I'm makeing another one now and chose to use plain white potatoes. Great recipe!!!

Super easy to make - put it in the crock pot and forget about it!! The apple juice gave the veggies and the meat a great flavor. Pork was tender and very good! Whole family enjoyed it!

This was wonderful. I took some of the juice from the pot and made a gravy. The apple juice gave the sweet potatoes a wonderful flavor. The thyme went well with the flavors going on as well. Will definately make again.
