Enjoy a chili without tomatoes that's a cousin to classic chili. Chicken and white beans make it "white chili," while cumin, pepper sauce and cilantro give it the zip.

So how much chicken do you think if you use chicken breasts instead--still pretty new to cooking!

Very good chili I that I will make again! I used chicken breast and made a double batch so that I could freeze half of it. My 19mth old loved it too!

I have been making this exact recipe for a couple of years now. The entire family loves it. Usually my husband teases me that the quantity I make in a crock pot is enough for a small army and that he gets tired of eating the same thing for 3 nights. Not with this recipe. It usually gets eaten the same night I make it. I cook bone in, with skin thighs overnight in the crock pot since they are cheaper that the skinless. Then after cooling, I pull them apart and put the meat back in with all of the ingredients and simmer half a day. Sometimes I throw a can of hominy in too. Very much a keeper recipe.

I have made this for the family several times with some changes each time, adding or deleting ingredients. The term "chili" in the title is not appropriate if prepared as shown. I have added chopped celery and bell peppers. I also add a step by sautéing the onion, garlic, celery and peppers in some butter and olive oil. Just when they begin to soften I add some flour which helps to thicken the broth. My family prefers a milder chili than I do so I add extra hot sauce after serving to give it more of a kick.

I have cooked many different recipes...but this is one of my families most favorite. I did add heavy whipping cream to make it a little richer and doubled the recipe so there would be leftovers. AWESOME!!!

I have made this recipe for years. It is mild, great for those who don't like spicy dishes, but you can rev up the spice on your own. Definately add the diced, mild green chilies (then come in a small can). Top each bowl with shredded Monterey Jack cheese.............yum. This is a very healthy dish also.
