Made this last night as written and it was pretty good, but felt like it was missing something. I think next time I'll add some red pepper flakes or maybe some lemon juice.

This was absolutely delicious! A big flavor change from your usual 'beans' meal. Be careful with the cooking time though, 4 hours can be too long.

I did not enjoy this recipe. the beans were way over cooked after only 4 hours in the crock pot. that pretty much ruined the whole dish. i'm not sure if i'd risk trying it again to see if i like it when the beans are cooked the right amount of time.

I rarely write reviews, but this one is hard to resist. This recipe is delicious and packed with flavor, despite the limited ingredients. It's a great summer AND winter treat. I personally like it way better served cold, but to each their own. As a variation to this recipe, I am going to add feta cheese next time.

This recipe is delicious, I''ve made it several times. The trick is not to overcook the beans, and to add the dried tomatoes and olives just before serving.

This recipe is great hot or cold. The blend of the sun-dried tomatoes and olives really brought out an excellent flavor with the beans. The key is to not over cook your beans and to add the olives as well as the tomatoes after the beans have cooked; just before serving. And yes the leftovers are just as good cold. Enjoy!!

I really wanted to like this recipe. The beans got too mushy and I made the mistake of waiting a while after I added the tomatoes to actually eat the dish. The result was a nasty tomato flavor as the tomatoes re-hydrated sufficiently to no longer have good flavor. I might try this again, but will watch the beans more closely so they don''t cook too long, and will not add the tomatoes to the pot - instead I''ll top each individual serving with them.

This makes an excellent vegan soup. We put it over brown rice. It makes quite a bit, and would be a great choice for a potluck. Add a salad and a roll and dinner is complete.

This was a very easy recipe and produced an excellent soup. We cooked it on low for 8-10 hours while at work instead of the shorter time on high. Since there is only 2 of us, we ended up with some leftovers. The soup was better! the second time around - We served the soup with some nice warm Italian bread and olive oil/balsamic vinegar for dipping. Excellent! It will remain in our repertoire!
