cans (14 oz each) vegetable broth

can (28 oz) Muir Glen® organic diced tomatoes, undrained

medium carrots, chopped (1 1/2 cups)

small zucchini, cut into 1/2-inch slices

medium yellow bell pepper, cut into 1/2-inch pieces
8
medium green onions, sliced (1/2 cup)

cloves garlic, finely chopped
2
cups shredded cabbage
2
teaspoons dried marjoram leaves

teaspoon salt
1/4
teaspoon pepper
1
cup uncooked instant rice
1/4
cup chopped fresh basil leaves
  • 1 In 3 1/2- to 6-quart slow cooker, mix all ingredients except rice and basil.
  • 2 Cover; cook on Low heat setting 6 to 8 hours.
  • 3 Stir in rice. Cover; cook on Low heat setting about 15 minutes longer or until rice is tender. Stir in basil.

    This was quite easy and good. I made several substitutions according to what I had on hand. I used regular onion for the green onion, and chopped fresh spinich (added at the end with the basil)for the cabbage. I also added a cup of sliced mushrooms, 2 stalks of celery sliced in 1/2 inch pieces, and a can of black beans-undrained. I did not have crushed tomatoes and so I used a can of diced tomatoes (basil, garlic and oregano flavored). I always cut back or omit the salt and for this I didn't add any at all. I threw it all in the crockpot this morning and we had very flavorful soup shortly after we got home!
