I luvd the intentions of this creative soup. I don't and hate to critize other cooks receipes its not necessary & unfounded. I do however, like to put my own spin on things if I feel I need to add as I am a big herb person having my own garden I do so. Again, however, it is a good soup. I most of the time I make my own creations by experminations. Instead of "It was Blah", tryed it, it was good, however I added my own touch to to it. COOK ON....Peace

I made this recipe twice this past weekend! Once for my 90 year old foster mom and she really enjoyed it. I used carrot shreds instead of the carrot slices. I made this first one with Johnsonville Italian 3 Cheese Chicken sausage. Restaurant quality results. The second one I made for the waitresses at our local Pitt Grill. I made this one with turkey sausage and it was very good. This soup will freeze well - if you have left overs. Your house will smell wonderful when you walk in after errands, work or just doing chores.

My whole family including picky kids enjoyed this recipe. I omitted extra salt and used a lower sodium chicken broth and it was salty enough. I also substitued cubed turkey ham for traditional ham and no one noticed. The only thing I would do different next time is use my food processor to make the vegetables less chunky.

I used the dry beans...after washing them the night before I soaked them in warm water overnight and it really cuts down the cooking time in the crock pot. Then I used smoked ham shanks and gives the beans a very tasty flavor. I put the ham shanks in after I let the beans and veggies cook for about a hour or two. Remove the shanks after they cook for another couple hours and remove them and remove the meat and put it back in with the beans and cook until beans are tender. Try this...you will like it. And a couple bay leaves adds to the flavor also.

I used a regular ham hock instead of just diced ham. It gave the broth MUCH more flavor. Just removed the large bone at the end of the cooking time and shredded the meat. I also substituted 1/2 package of frozen spinach (drained and squeezed of excess water) in place of the parsley.

We loved this recipe. We made a few minor changes to the recipe. I created a blonde colored rue to thicken the soup base, a little went a long way. I added a can of Cheese Soup, 1/2 cup milk and two beaten eggs. I also added about 4 green onions, chopped at the same time I added the chopped fresh parsley. It was a huge hit... delicious, hearty, healthy and very colorful! I will totally make this again and again...
