Slow Cooker Tex-Mex Round Steak

One cup of fresh cilantro used in this recipe might seem like a lot, but cooked for a long time, it becomes very mild, blending in the overall flavor of the dish.

I only used 2 pieces of eye round each about 3-4" x 1/2". Kept the onion, celery, and broth the same. Used a can of corn drained, instead of the frozen, can of garbanzo beans drained, instead of the black beans and added a can of dark kidney beans drained. Used a 16oz jar of spicy salsa with a tiny bit of water to rinse it all from the jar. Because I only had dried cilantro, I used 1/3 of a cup. Put it on High at 9:30 and turned it off at 3:00--it was boiling away! It was still hot when I served it at 5:30. It was delicious! My husband loved it and said the smell it created in the house while it was cooking was wonderful!
