Traditional tamales get a new wrap--golden corn muffin mix bakes in the slow cooker on top of the tamale filling.

We thought this was very good. My whole family liked it. I made it almost exactly as written, except I put in one can kidney beans and one can black beans. I also added a can of diced tomatoes, fresh cilantro and chili powder. It was a great dish for a stormy night.

I didnt use enchillada sauce and used chili beans in chili sauce and added a dried ancho chili I diced. It was absolutly pefect-spicy and sweet with the corn bread. I topped with some sour cream and next time I think I may add chorizo to the ground sirlion. def a keeper, though my lil ones dont like the spicy stuff my husband and I ate it all!

I thought this was okay. I did not do the chilies or the green onion. I added black olives. I did this & the enchilada soup. I loved the soup so much. This was good because, I like to use my slow cooker. I found myself wanting to just eat the corn bread, but it was greasy...So I ended up making corn bread by it's self..this is still in the frig & I'm really not looking forward to eating it.

I made this recipe and it turned out really well. I live in Rio de Janeiro and get hungry for "American Food". This was easy and I had no trouble getting the ingredients!

This was ok. I followed the recipe exactly. The cornbread (Betty Crocker) did cook up nicely...for cornbread. It did not, however, get soaked with the sauce like the recipe said. Also, I think this could have used a little more meat/bean mixture and a little more enchilada sauce. It''s nice that you can tailor the recipe to suit your ''spicy'' taste. You could choose mild or hot enchilada sauce, adjust the amount of chilis added to the cornbread mix, and even add ground red pepper, hot sauce, etc. to the meat/bean mix.

I thought this was very bland. Really needed to be spiced up quite a bit. I did like how the cornbread baked in the slow cooker. Who would have thought....! If I try it again, I will add some extra spices. Not one of my favorites.

This was really very good. The cornbread came out perfect. I used some leftover refried beans and green enchilada sauce and it was delicious. My husband approved and he''s picky.
