Slow Cooker Steak and Black Bean Chili

Ingredients

lb beef top round steak
1
envelope (1 oz) onion soup mix (from 2-oz package)
2
cans (15 oz each) black beans, rinsed and drained
1
can (28 oz) diced tomatoes, undrained
1
can (8 oz) tomato sauce
1
can (4.5 oz) Old El Paso® chopped green chiles, undrained
3
teaspoons chili powder
1
teaspoon ground cumin

  • 1 Trim fat from beef. Cut beef into 3/4-inch cubes. In 3 1/2- to 4-quart slow cooker, mix beef and soup mix (dry). Stir in remaining ingredients.
  • 2 Cover and cook on Low heat setting 8 to 10 hours.

I made this dish last night and it was soooo good! I made it exactly as the recipe said plus a small can of corn and a small can of chopped jalapenos (the green chillies gave it good flavor but it wasn't spicy at all!). Next time I might use a little less beef, use real onions, maybe add some green or red pepper and use only half of the soup envelope (it was a little salty) but overall it was very good!

I made this dish a little differentlt than the original recipe. I used only 1 can of beans, no chilis, and I added a half of a fresh onion and a quarter of a fresh bell pepper and a couple of cups of watwer and I simmered it on the stovetop for about a half an hour. The meat was tender and thje dish was delicious served over white rice with cornbread on the side!

Really easy and very tasty recipe. We always use ground turkey in our chili so that was a simple, but powerful switch. I loved the tenderness of the beef. I stuck to the recipe exactly but could easily imagine future modifications because it is so simple (adding green pepper, corn, etc.)
